The Mountain
Phoenix Mountain lies in Fenghuang Town, Chao’an District, Chaozhou City, in eastern Guangdong Province. The surrounding mountain range features steep slopes, forested hills, tea plantations and villages shaped by generations of tea cultivation.
The area’s highest peak, Fengniaoji 凤凰髻, reaches approximately 1,498 metres above sea level.
The mountain environment, with its humid subtropical climate and varied elevations, provides suitable conditions for growing tea making the ara particularly famous for its connection to Phoenix Dancong, a regional oolong whose reputation extends beyond Guangdong. Tea cultivation and processing are central to the local economy, while tea tasting and traditional preparation remain important parts of Chaoshan's cultural identity.
About Phoenix Dancong
The Chinese name Dancong is traditionally associated with selecting and processing tea from individual bushes. Today, the term covers a broader family of related teas and cultivated lines originating from the local tea-growing tradition.
Phoenix Dancong is a partially oxidised tea that develops its distinctive aromatic profile through the tea plant, growing environment and processing techniques. Its complexity makes it appreciated by initiated tea lovers.
One of Phoenix Dancong’s defining features is the variety of aromas associated with different cultivars and tea styles.
- Mi Lan Xiang 蜜兰香 : Honey Orchid
- Ya Shi Xiang 鸭屎香 : Duck Shit Fragrance famous traditional name commonly described as floral and fruity
- Zhi Lan Xiang 芝兰香 : Orchid Fragrance
- Huang Zhi Xiang 黄枝香 : Gardenia Fragrance floral aroma is more pronounced than orchid fragrance
These names describe recognised aroma styles rather than added flavourings.
the exact character of a tea depends on the material used, the growing conditions, the harvest and the processing
Traditional Phoenix Dancong production involves several carefully controlled stages
Harvesting → Withering → Fermentation / Oxidation → Shaping and fixation (heat) → Drying and roasting
The details vary between producers and tea styles. Skilled processing is essential to preserving the tea’s fragrance without creating excessive bitterness or harshness.
Elevation, sunlight, rainfall, soil, temperature and the characteristics of individual tea plants all influence the finished tea. Some of the best-known tea production areas include Wudong Village and other tea-growing communities around Fenghuang Town.
Thanks to its localization, Phoenix Mountain is closely connected to the Gongfu Cha, a method of preparing and sharing tea that emphasises skill, attention and repeated short infusions.
It is particularly well suited to aromatic oolongs such as Phoenix Dancong.
If you visit Phoenix Mountain you can look for tea rooms or local producers offering guided tastings, an opportunity to compare different Dancong aroma styles and learn Gongfu Cha techniques
